Mozzarella Fior di Latte, made from fresh cow’s milk, is a soft and delicate stringy cheese with a fresh milky taste. Our soft mozzarella packed in liquid is excellent for making Caprese salad, while our Filoni or roll packed dry is used for pizza and a variety of recipes.
Burrata meaning “buttery” in Italian, has an outside shell that is made of a thin mozzarella and a mixture of stringy mozzarella pieces and cream inside.
Best eaten immediately at room temperature and removed from its liquid for at least 30 minutes. It goes well with salads, breads, tomatoes, flavored olive oil, and as pizza and pasta topping.
Caciocavallo in Italian means “Cheese on horseback”, coming from the fact the cheese is left to dry by hanging it on a horizontal stick. Our Caciocavallo is made from pure cow’s milk and aged from 1-3 months. Similar in taste to Provolone, Caciocavallo is a pasta filata cheese that has a mild flavor and a firm smooth texture. It goes well with fruits or grated and baked on toast or other baked dish.
This semi-firm cheese is smooth and has a mild sweet buttery flavor. With a creamy texture and delicate aroma, it is great melted on paninis, served on cheese platters or paired with fruit and wine.

Stracchino or Crescenza, made from fresh cow’s milk high in butterfat, has a very soft creamy texture with a mild, delicate and a slight tangy, milky and tart flavor. This rindless cheese is served fresh on toast, drizzled with honey, or as filling for flat breads.
This soft creamy cheese has a fresh mild flavor and great paired with honey, fruits, chocolate and nuts. Also excellent in pastas and cakes.
Our fresh Fetta is a compact cheese made from full cow’s milk and has a mild salty and tangy flavor. Great addition to salad.
Our very own Filipino cheese, made from pure cow’s milk and has a smooth texture and mild flavor compared to the traditionally saltier versions made locally.
It is a fresh soft-ripened cheese of the Stracchino family. It has a smooth, tangy and mildly sour flavor. Usually eaten on its own or with a little honey.
With chili pepper flakes, this cheese blends our mild table cheese with the hot taste of red peppers. Great additional to antipasto platters and salads.
